
This is the first in our new range of complete meals and comes on a bed of pilau rice. It is available as part of our doorstep delivery range or why not have a go at making it yourself.
As a teenager my mum ran a catering company from home. Any leftovers would be frozen and I spent many an afternoon with friends watching a movie with a bottle of Appletise and a pile of leftover Tandoori Chicken. It was the memory of this that inspired me to try out a tandoori marinade for tofu with great results.

Place 2 Tablespoons of Tandoori Masalla in a mixing bowl. There are some excellent shop bought blends available or why not try blending your own, make sure you include some paprika or tomato puree to get the deep red colour. Add a Dash of Lemon Juice, extra Chilli Powder to taste if needed and mix to a thick paste adding a little water if necessary. Drain and squeeze a block of Tofu and dice into 1” pieces, add to the marinade, toss to coat the pieces and leave to marinade for at least 2 hours.
Preheat the oven to 220C. Dice 800g of Veg into 1” dice, we use peppers and red onion but you can use any veg that is suitable for roasting. Add to the tofu mix with 1 Tablespoon of Rapeseed Oil. Toss to coat all the pieces, place in a roasting tin and roast for 30 mins stirring after 15 minutes.

Serve with rice and a dollop of vegan mayo or roll in a wrap with some shredded lettuce and vegan mayo.
