Toast 2 pieces of bread, slice them through the middle horizontally so that you end up with 4 slices with one toasted side and one untoasted side.
Finely dice a clove of garlic and mix with about 2 Tbsp any veg oil or butter. Spoon over the untoasted sides of the bread, season with salt and pepper and cook under a hot grill until golden. Cut into bite size pieces and enjoy.
You can shake it up and season with any herbs and spices here are a few of my favourite combos – Curry leaf & cumin seeds – Chilli, cumin, paprika & oregano – Chinese 5 spice – Finely diced tomato & onion with oregano.
